They said it couldn't be done. But yes, indeed it can. A delicious cheesecake using just three ingredients? It's possible—and we've got the recipe right here, thanks to those very clever editors over at Epicurious.
It's lighter and airier than your typical New York-style cheesecake, which is a bonus in our book. It also skips the crust, making the prep much simpler, too. And the three ingredients? White chocolate, cream cheese, and eggs. Done. (You don't even need sugar—how amazing is that?)
The technique is easy: mix melted white chocolate with the cream cheese, then add egg yolks. Gently combine with whipped egg whites to incorporate lots of air and lighten up the batter. Bake in the oven for about 45 minutes, then let chill for several hours before serving.
You'll end up with a melt-in-your-mouth, fluffy cheesecake that's just the right amount of sweet. And no one would ever guess that it only took three ingredients.
